Hi

Maybe a silly question but ... how do I remove stars that rate Sounds?

Did you try reducing the number of stars by clicking and dragging to the left?

Yes and that work until is left only one star. How to remove this last one?

If you click just to the left of the leftmost star, you can remove the star rating.  It's a pretty small region but try pointing your cursor at the left tip of the star and you'll hit the "no stars" region.
